Procedure of Manual Warewashing Poster
To help prevent foodborne illness, food establishments in the District of Columbia are strongly encouraged to display the Procedure of Manual Warewashing Poster near all warewashing sinks.
The poster provides a five-step guide to cleaning and sanitizing utensils and equipment:
- Pre-clean: scrape or remove food debris.
- Wash: thoroughly wash items to remove loose food.
- Rinse: rinse away all cleaning chemicals and abrasives.
- Sanitize: sanitize items using either hot water or chemicals.
- Air-Dry: allow all items to air-dry.
Proper warewashing can eliminate bacteria and help safeguard the health of customers.
